The little difference we can make

We believe it's worth thinking about our environment.

Waste sorting is common sense, and we do the best we can at sorting plastic, glass, cardboard, etc. Residual food waste and oil are converted into bio-fuel. We are certified through ReFood, and all our cleaning products, etc. are Nordic Eco-labeled.

Fresh fish from certified suppliers

We want to help minimize the bycatch of e.g. seabirds, dolphins, and sea turtles, among others. This is why we buy fish from certified suppliers.

You'll notice we don't serve eel on the menu, as it is an endangered species that we would like to see survive.

Organic fruits & vegetables, whenever it's possible.

We  make a great effort when choosing raw materials. We use organic ingredients as much as possible, and we always use organic rice grown in Italy.

Re-usable chopsticks.

The chopsticks we use are made of fiberglass. They last forever and can be used over and over again. They are machine-washable and do not emit toxic chemicals like their disposable wooden counterparts do.

Disposable chopsticks also contribute to global deforestation. We would therefore like to sell you a set at our purchase price, so that together, we can make a small difference.

Earth-friendly Sumi coal.

We use Sumi coal, which is a non-toxic, 100% CO2 neutral coal produced from coconut shells. They burn for nearly five hours and can reach very high temperatures with minimal residue of smoke and ashes.

Aside from being a greener alternative, paired with our original Japanese charcoal grills, they give—without discussion—the absolute best taste to the food, if you ask us.

Socially responsibly produced, high quality chocolate.

We use chocolate from Callebaut (Recipe n° 823), which is of course certified sustainable. The kids are precious, and we want the best for them. This applies both to the children who eat the chocolate, and to ensure that it isn't made using child labour.

For every pack of Callebaut Chocolate we buy,  a part is reinvested in sustainable cocoa farming through the Cocoa Horizons Foundation.

Packaging

Our takeaway packaging is made from recycled plastic.

Since we do not want to impose on you a relatively high tax for a more sustainable packaging, instead, we choose to believe that you will also sort plastic and help us recycle the important resources.

We always keep a close eye on the market for better alternatives at reasonable prices.
